Tuna chick pea and couscous salad- about 420 calories for a really large serving.
I used a can of chick peas, a can of tuna, and whole wheat couscous (1/3 cup dry measure cooked using 1/3 cup microwaved water with 1/2 tsp oil and fresh squeezed lime juice). I put this together with cucumber, carrots, onion, fresh culantro, salsa verde, and seasoned it with salt, pepper, cayenne and just another 1/2 tsp of olive oil for the whole thing, makes 2 servings. Served on a bed of field green/baby spinach mix, it actually turned out pretty tasty. Lots of complex flavor and texture, good summer dinner with no real cooking required.
